I don't know about you but one of my most favorite meals every year is Thanksgiving dinner. Of course the reason for the season makes it extra special, but the gathering together and enjoying great food is special, too.
In my quest to give up dieting and get to just living, I try not wait to make certain recipes and save them for holidays. We all know that life is way too short and we are not promised tomorrow so why do we do that?
Why can't we have our favorite Christmas cookies on a warm day in June, for instance?? And why do we wait to have things like turkey dinner only on Thanksgiving or Christmas or another holiday?

Any Day Can Be Turkey Day!
Here's the thing: I was hungry for turkey and stuffing so I made some. It was a random Sunday afternoon and I just went for it and I will not apologize.
Sounds kind of dramatic but I can assure you it was not – but what WAS dramatic was the best baked turkey recipe ever!

It didn't take me any thawing time, brine time, paranoia about a big bird leaving salmonella on my countertops, and I didn't have to stick my hand into some cavity to pull out some other *bleh* parts.
The best part about it all: it was fast, it was easy, and it was delicious. I guess that's three things but I think you get me.
Easy Turkey Tenderloin Recipe

Most grocery stores offer the turkey tenderloin package in the poultry section and it comes with two nice sized pieces. I cooked both for hubs and I.
We had one for dinner and I thinly sliced up the other one and we have turkey sammiches the next day – and we can ALL agree that Turkey dinner can only be bested by leftover turkey sandwiches, right??

How to Cook a Turkey Tenderloin in the Oven
This baked turkey tenderloin recipe could not be easier – just three ingredients, a cast iron skillet, and 30 minutes.
All we are doing is seasoning the turkey with honey mustard and rotisserie seasoning, putting it in a cast iron skillet and baking it! We are using high heat so it cooks quickly giving us delicious turkey.
No dried out bird here, friends. Tender and juicy turkey breast and full of flavor!
Ingredients
- 1 package Turkey Breast Tenderloins
- 2 Tbsp Honey Mustard, make your own with 1T dijon mustard and 1T honey
- 2 Tbsp Rotisserie Seasoning or Your Favorite Garlic Seasoning
- Nonstick Spray
Instructions
- Preheat oven to 425
- Spray a cast iron skillet or baking dish with nonstick spray
- Season the bottom of the dish with 1T Seasoning
- Place the tenderloins into the skillet or dish
- Baste the top of the tenderloins with Honey Mustard mixture
- Sprinkle remaining seasoning onto the tenderloins
- Place in oven and roast for 20-25 minutes or until a thermometer reaches 165 degrees.
- Remove, let sit for 5 minutes, then slice.
